  • 1 and 1/2 cups granulated sugar
  • 4 large eggs, at room temperature
  • 2 tsp vanilla extract
  • 1 and 1/2 tsp cornstarch
  • 3/4 cup full-fat sour cream, at room temperature
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp ground cloves
  • 1/4 cup all-purpose flour
  • 1/2 cup old-fashioned whole rolled oats
  • 1/4 cup brown sugar, packed
  • 1/2 tsp cinnamon
  • 1/8 tsp salt
  • 1/4 cup cold salted butter, cubed
  • 1 cup granulated sugar
  • 6 tbsp salted butter, cubed
  • 1/2 cup + 1 tbsp heavy cream
  • Pinch of flaky sea salt

Instructions

  1. Prepare by reading through the recipe and breaking it into manageable steps.
  2. Make the apple filling by cooking sliced apples with butter, cider, sugar, and spices until tender.
  3. For the crust, combine graham cracker crumbs and butter; press into a 9-inch springform pan and bake at 350°F (175°C) for 10 minutes.
  4. Create the cheesecake filling by beating cream cheese, then adding sugar, eggs, and the rest of the ingredients until smooth.
  5. Pour half of the cheesecake batter into the crust, layer with apple filling, then pour remaining batter on top.
  6. Prepare a water bath and bake cheesecake for 1.5 to 1.83 hours at 350°F (175°C).
  7. Allow to cool in the oven with door cracked for about 1 hour.
  8. Chill in the refrigerator for at least 6 hours or overnight.
  9. Prepare crumble topping and caramel sauce separately.
  10. Top chilled cheesecake with apple topping, crumble, and caramel sauce before serving.

Notes

Ensure all ingredients are at room temperature for a smoother batter. Use a water bath for a creamy texture.
