A perfect blend of moist muffins and a crunchy crumble topping, these Apple Crumble Muffins are a delightful treat for any occasion.
Ingredients
- ¾ cup (93 g) all-purpose flour
- ¼ cup (50 g) packed light brown sugar
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon (optional)
- 4 tablespoons (56 g) unsalted butter (melted)
- 2 cups (250 g) all-purpose flour
- 1 tablespoon ground cinnamon
- ½ teaspoon ground nutmeg (optional)
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- ½ cup (100 g) packed light brown sugar
- ¼ cup (50 g) granulated sugar
- ½ cup (113 g) unsalted butter (room temperature)
- ¼ cup sour cream (or Greek yogurt) (room temperature)
- 2 large eggs (room temperature)
- 1 teaspoon pure vanilla extract
- ½ cup (120 ml) milk (room temperature)
- 1 ½ cups diced apples (preferably Granny Smith or Honeycrisp)
Instructions
- Preheat your oven to 400° F and prepare a muffin tin with paper liners.
- Make the crumble topping by whisking together the flour, brown sugar, granulated sugar, and optional cinnamon in a bowl. Pour in the melted butter and mix until small clumps form.
- In a separate medium bowl, whisk together the 2 cups of flour, baking powder, salt, and cinnamon.
- In a large bowl, use an electric mixer to combine the brown sugar, granulated sugar, and room temperature butter until light and fluffy. Add eggs, sour cream (or Greek yogurt), and vanilla extract; mix until combined.
- Gradually add half of the flour mixture, blend, then pour in the milk. Add the remaining flour mixture and mix just until incorporated. Gently fold in diced apples.
- Divide the batter among the prepared muffin cups, filling each three-quarters full. Sprinkle crumble mixture over each muffin.
- Bake for about 20 minutes, or until a toothpick inserted in the center comes out clean.
- Allow muffins to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
For the best texture and flavor, use firmer apple varieties like Granny Smith or Honeycrisp. Ensure all ingredients are at room temperature for a uniform batter.
