Ingredients

  • 1½ cups cooking oil
  • 2 cups granulated sugar
  • 4 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon cinnamon
  • 1 teaspoon salt
  • 2 teaspoons vanilla extract
  • 3½ cups Granny Smith apples (peeled and finely chopped)
  • 1 cup pecans (finely chopped)
  • ¾ cups unsalted butter
  • 1 cup light brown sugar
  • ¼ cup whole milk
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish or two 9-inch round cake pans.
  2. In a large bowl, combine cooking oil and granulated sugar; beat in eggs one at a time.
  3. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt; gradually add to wet mixture until just combined.
  4. Fold in chopped apples and pecans.
  5. Pour batter into prepared pan(s) and bake for 30 to 35 minutes or until a toothpick comes out clean.
  6. While cake cools, prepare the caramel glaze by melting butter, adding brown sugar and milk, and boiling for 2-3 minutes; stir in vanilla.
  7. After cooling, drizzle the caramel glaze over the cake and top with additional pecans if desired.

For optimal results, use fresh Granny Smith apples and ensure all ingredients are at room temperature. Allow the cake to cool completely before applying the glaze.
