Ingredients
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1/2 cup milk
- 1 cup apples, peeled and diced
- 1 tsp cinnamon
- 1/2 tsp nutmeg
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
- In a bowl, mix the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
- In another bowl, cream the softened butter. Add the egg and milk to this mixture, whisking well until smooth.
- Gradually combine the wet and dry ingredients, stirring until just mixed. Fold in the diced apples, cinnamon, and nutmeg gently.
- Divide the batter evenly into the cupcake liners, filling each about two-thirds full.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Beat the softened butter with powdered sugar until creamy and fluffy for the frosting. Add a pinch of cinnamon and a splash of milk for desired consistency.
- Once the cupcakes have cooled completely, pipe the frosting onto each cupcake and enjoy.
