Description

A comforting soup that combines crispy bacon, creamy cheddar cheese, and soft gnocchi for a warm and filling meal.


Ingredients

  • 8-10 slices bacon, cooked and chopped
  • 1 tbsp butter or olive oil
  • 1 large onion, diced
  • 2 large carrots, peeled and sliced
  • 4 cups chicken broth
  • 1-2 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder (or 4 cloves minced garlic)
  • ¼ tsp dried thyme
  • ½-1 tsp red chili flakes (optional)
  • 16 oz gnocchi
  • 2 cups heavy cream or half-and-half
  • 2 cups shredded cheddar cheese (medium or sharp)


Instructions

  1. Cook the bacon in a pan until crispy, then chop it and set aside.
  2. In a large pot, heat the butter or olive oil. Sauté the diced onions and sliced carrots until they are tender.
  3. Add the chicken broth to the pot and bring it to a simmer.
  4. Stir in the heavy cream, seasonings, and the shredded cheese while stirring continuously until it melts.
  5. Add the gnocchi to the pot and cook for about 2 minutes, or until they are soft.
  6. Finally, stir in the chopped bacon, adjust the seasoning if needed, and serve hot.

Notes

Consider garnishing with extra cheddar cheese or fresh herbs. Serve with crusty bread or a side salad.
