Ingredients
- 2 pounds beef chuck, cut into cubes
- 4 cups beef broth
- 3 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Brown the beef cubes on all sides.
- Add the onions and garlic; cook until softened.
- Stir in the tomato paste, then add the beef broth, carrots, potatoes, bay leaf, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 90 to 120 minutes, until the beef is tender and the stew thickens.
- Remove the bay leaf before serving. Enjoy your comforting beef stew!
