Description

Ingredients

  • 2 cups blueberries (fresh or frozen)
  • 2 tablespoons maple syrup
  • 2 cups old-fashioned rolled oats
  • 4 tablespoons chia seeds
  • 3 cups water or milk
  • 4 tablespoons maple syrup (for oats)
  • 1 cup Greek yogurt (vanilla or blueberry yogurt)
  • 2-3 teaspoons vanilla extract
  • 1 pinch salt


Instructions

  1. In a saucepan over medium heat, combine the blueberries and 2 tablespoons of maple syrup. Cook for about 5 minutes until the blueberries soften and release their juices. Remove from heat and set aside to cool.
  2. In a large bowl, mix together the rolled oats, chia seeds, and a pinch of salt.
  3. In another bowl, whisk together the water or milk, 4 tablespoons of maple syrup, Greek yogurt, and vanilla extract.
  4. Pour the liquid mixture into the oats and stir until everything is combined.
  5. In jars or bowls, layer the oat mixture and blueberry layer, starting with oats, then adding blueberries, and repeat until all ingredients are used.
  6. Cover and refrigerate overnight.
  7. Serve chilled, adding toppings like nuts or extra blueberries if desired.
