Ingredients
- 500 grams all-purpose flour
- 80 grams sugar
- 10 grams salt
- 15 grams active dry yeast
- 4 large eggs
- 250 grams unsalted butter (softened)
- 200 milliliters warm milk
- Filling of choice (e.g., chocolate, almond cream, fruit preserves)
Instructions
- Activate the Yeast: In a bowl, combine warm milk and active dry yeast. Let it sit for about 5-10 minutes until frothy.
- Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, and salt.
- Combine Ingredients: Make a well in the center of the dry ingredients and add the activated yeast mixture and eggs. Mix until the dough begins to come together.
- Incorporate Butter: Gradually add the softened butter, kneading the dough until smooth and elastic (around 10 minutes).
- First Rise: Place the kneaded dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place until it doubles in size (1-2 hours).
- Shape the Dough: Punch down the risen dough and divide it into portions. Roll out each piece into a circle, place your desired filling in the center, and fold or twist the dough to encase the filling.
- Second Rise: Arrange the shaped pastries on a baking tray lined with parchment paper, cover, and let them rise for another 30-45 minutes.
- Preheat Oven: Preheat your oven to 180°C (350°F).
- Bake: Brush the tops of the pastries with an egg wash and bake for 20-25 minutes, or until golden brown and puffed.
