A delightful dessert that combines the warmth of spices with rich cream cheese frosting, perfect for any occasion.
Ingredients
- 180 g butter (room temperature)
- 150 g granulated sugar
- 150 g dark brown sugar
- 4 large eggs (room temperature)
- 330 g all-purpose flour
- 1 tbsp cornstarch
- 1 tbsp ground cardamom
- 1 tbsp ground cinnamon
- 1 1/2 tsp ground ginger
- ½ tsp ground allspice
- ½ tsp ground nutmeg
- ¼ tsp ground black pepper
- 3/4 tsp baking powder
- 3/4 tsp baking soda
- 1/2 tsp salt
- 240 g sour cream (room temperature)
- 60 g vegetable oil (e.g., canola oil)
- 1 1/2 tsp vanilla extract
- 200 g butter (room temperature, for frosting)
- 280 g powdered sugar
- 30 g dark brown sugar (for frosting)
- 115 g full-fat cream cheese (room temperature)
- 1/2 tsp vanilla bean paste
Instructions
- Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and lining with parchment paper.
- In a large mixing bowl, combine 180 g of butter, 150 g of granulated sugar, and 150 g of dark brown sugar. Beat until light and fluffy.
- Incorporate 4 eggs one at a time, mixing well after each addition.
- In another bowl, whisk together 330 g of flour, 1 tbsp cornstarch, 1 tbsp ground cardamom, 1 tbsp ground cinnamon, 1 1/2 tsp ground ginger, ½ tsp ground allspice, ½ tsp ground nutmeg, ¼ tsp ground black pepper, 3/4 tsp baking powder, 3/4 tsp baking soda, and 1/2 tsp salt.
- Gradually add the dry mix to the wet mixture, alternating with 240 g sour cream and 60 g vegetable oil. Mix until just combined, then add 1 1/2 tsp vanilla extract.
- Divide the batter between the prepared pans and smooth the tops. Bake for 25-30 minutes or until a toothpick comes out clean.
- Allow cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
- For the frosting, beat together 200 g butter, 280 g powdered sugar, 30 g dark brown sugar, 115 g cream cheese, and 1/2 tsp vanilla bean paste until creamy.
- Once cooled, place one cake layer on a plate, frost the top, and add the second layer. Frost the top and sides as desired.
Notes
Use room temperature ingredients for better mixing. Avoid overmixing to prevent a dense cake.
