Description

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 2 cups mashed potatoes
  • 2 tablespoons butter
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste


Instructions

  1. In a skillet, heat olive oil over medium heat. Add shrimp and sprinkle with paprika, cooking until shrimp are pink and opaque. Remove from skillet and set aside.
  2. In the same skillet, add butter and garlic, cooking until garlic is fragrant.
  3. Pour in heavy cream and bring to a simmer.
  4. Stir in Parmesan cheese and thyme, cooking until the sauce thickens.
  5. Season with salt and pepper to taste.

Notes

Don’t overcook the shrimp; they should be just pink and opaque. You can use frozen shrimp, just ensure they’re properly thawed. A splash of lemon juice can brighten the sauce.
