Ingredients
- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 2 cups mashed potatoes
- 2 tablespoons butter
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
Instructions
- In a skillet, heat olive oil over medium heat. Add shrimp and sprinkle with paprika, cooking until shrimp are pink and opaque. Remove from skillet and set aside.
- In the same skillet, add butter and garlic, cooking until garlic is fragrant.
- Pour in heavy cream and bring to a simmer.
- Stir in Parmesan cheese and thyme, cooking until the sauce thickens.
- Season with salt and pepper to taste.
- Serve shrimp over a bed of mashed potatoes, drizzled with the cream sauce.
Notes
Don’t overcook the shrimp; they should be just pink and opaque. You can use frozen shrimp, just ensure they’re properly thawed. A splash of lemon juice can brighten the sauce.
