Rich, moist, and intensely chocolatey muffins perfect for breakfast, snacks, or dessert.
Ingredients
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1 cup chocolate chips
- 1/2 cup chocolate ganache (for filling)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt until evenly combined.
- In another bowl, mix the granulated sugar, brown sugar, and melted butter until well combined. Add the eggs and vanilla extract, and mix until smooth. Stir in the buttermilk.
- Gradually mix the dry ingredients into the wet ingredients until just combined. Gently fold in the chocolate chips.
- Fill each muffin cup halfway with the batter. Add a spoonful of chocolate ganache in the center, then top with more batter to fill the cups.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool for a few minutes before transferring to a wire rack.
Notes
For best results, use room temperature ingredients and do not overmix the batter.
