Description

Rich, moist, and intensely chocolatey muffins perfect for breakfast, snacks, or dessert.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup chocolate chips
  • 1/2 cup chocolate ganache (for filling)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt until evenly combined.
  3. In another bowl, mix the granulated sugar, brown sugar, and melted butter until well combined. Add the eggs and vanilla extract, and mix until smooth. Stir in the buttermilk.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined. Gently fold in the chocolate chips.
  5. Fill each muffin cup halfway with the batter. Add a spoonful of chocolate ganache in the center, then top with more batter to fill the cups.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool for a few minutes before transferring to a wire rack.

Notes

For best results, use room temperature ingredients and do not overmix the batter.
