Description
A comforting and hearty ground beef stew that’s perfect for chilly days, quick to prepare, and requires minimal cleanup.
Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 3 cups beef broth
- 1 can diced tomatoes
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and garlic, and sauté until softened.
- Add the ground beef and cook until browned.
- Stir in the carrots and potatoes, followed by the diced tomatoes and beef broth.
- Season with thyme, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for about 30 minutes or until vegetables are tender.
- Serve hot.
Notes
For added flavor, try browning the beef well before adding the vegetables. You can also use any vegetables on hand.
