Description

A comforting and hearty ground beef stew that’s perfect for chilly days, quick to prepare, and requires minimal cleanup.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 3 cups beef broth
  • 1 can diced tomatoes
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon olive oil


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened.
  3. Add the ground beef and cook until browned.
  4. Stir in the carrots and potatoes, followed by the diced tomatoes and beef broth.
  5. Season with thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat and let simmer for about 30 minutes or until vegetables are tender.
  7. Serve hot.

Notes

For added flavor, try browning the beef well before adding the vegetables. You can also use any vegetables on hand.
