Description

A quick and nutritious dish combining pasta and fresh broccoli, perfect for busy weeknights.


Ingredients

  • 8 oz pasta of choice
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 tablespoon lemon juice


Instructions

  1. Cook pasta according to package instructions. In the last 2-3 minutes of cooking, add the broccoli florets to the boiling pasta. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the drained pasta and broccoli to the skillet. Season with salt and pepper, and toss to combine.
  4. Stir in Parmesan cheese and lemon juice. Serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat with a splash of water or olive oil if needed.
