Description

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cooked quinoa or rice
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 3 cloves garlic, minced
  • 1 tablespoon lemon juice


Instructions

  1. In a bowl, combine shrimp, olive oil, smoked paprika, garlic powder, salt, and pepper. Toss to coat and marinate for 15-20 minutes.
  2. Preheat the grill or grill pan over medium-high heat.
  3. Drizzle asparagus with olive oil, season with salt and pepper, and toss to coat.
  4. Grill asparagus for 4-5 minutes until tender and slightly charred. Set aside.
  5. Grill the marinated shrimp for 2-3 minutes on each side until pink and opaque.
  6. In a medium bowl, mix Greek yogurt, mayonnaise, minced garlic, lemon juice, salt, and pepper until smooth.
