Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 bunch asparagus, trimmed
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup cooked quinoa or rice
- 1/4 cup fresh parsley, chopped
- 1/2 cup Greek yogurt
- 1/4 cup mayonnaise
- 3 cloves garlic, minced
- 1 tablespoon lemon juice
Instructions
- In a bowl, combine shrimp, olive oil, smoked paprika, garlic powder, salt, and pepper. Toss to coat and marinate for 15-20 minutes.
- Preheat the grill or grill pan over medium-high heat.
- Drizzle asparagus with olive oil, season with salt and pepper, and toss to coat.
- Grill asparagus for 4-5 minutes until tender and slightly charred. Set aside.
- Grill the marinated shrimp for 2-3 minutes on each side until pink and opaque.
- In a medium bowl, mix Greek yogurt, mayonnaise, minced garlic, lemon juice, salt, and pepper until smooth.
- Assemble the bowl with quinoa or rice as the base, topping with grilled asparagus, shrimp, and creamy garlic sauce.
- Garnish with chopped fresh parsley before serving.
