Description
A comforting and hearty beef stew made quickly in an Instant Pot, perfect for busy days.
Ingredients
- 2 lbs beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 3 large carrots, sliced
- 2 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Turn on the Instant Pot and select the “Sauté” function. Add the olive oil and let it heat.
- Add the beef chuck to the pot. Brown the beef for about 5-7 minutes, stirring occasionally. Remove the beef and set it aside.
- In the same pot, add the onion and garlic. Sauté for 2-3 minutes until the onion is translucent.
- Stir in the tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
- Return the browned beef to the pot. Add the carrots, potatoes, and beef broth.
- Close the lid of the Instant Pot and set it to “Manual” for 35 minutes.
- Once cooking is complete, allow the pot to naturally release for 10 minutes before doing a quick release for any remaining pressure.
- Open the lid carefully. Stir the stew and adjust seasoning if needed.
Notes
Make sure to brown the beef well for added flavor. You can adjust the vegetables according to your preference. If you want a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it in after cooking.
