Delightful lemon brownies that offer a refreshing twist on traditional desserts with a soft and chewy texture.
Ingredients
- 1½ cups all-purpose flour
- 1½ cups granulated sugar
- ½ teaspoon salt
- 1 cup unsalted butter (softened)
- 4 large eggs (room temperature)
- 2 tablespoons lemon zest (from 2-3 lemons)
- ⅓ cup fresh lemon juice
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- 2-3 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
- In a large bowl, combine the softened butter and granulated sugar. Mix until creamy. Add the eggs one at a time, mixing well after each addition. Stir in lemon zest, lemon juice, and vanilla extract until combined.
- In another bowl, whisk together flour and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Pour the batter into the prepared baking dish and smooth the top.
- Bake for 20-25 minutes until the edges are golden and a toothpick inserted into the center comes out clean. Allow the brownies to cool in the pan.
- Make the glaze by mixing powdered sugar, lemon juice, and lemon zest in a small bowl until smooth. Drizzle the glaze over cooled brownies.
- Cut the brownies into squares or rectangles and serve. They can be enjoyed plain or with vanilla ice cream or whipped cream.
Notes
For an extra lemony flavor, add more lemon zest. Ensure eggs are at room temperature for the best mixing. Don’t overbake the brownies.
