Delightful mini apple pies featuring a flaky crust, spiced apple filling, and a luscious vanilla cream topping, perfect for gatherings or family surprises.
Ingredients
- 2 cups of all-purpose flour
- 1/2 cup of unsalted butter, chilled and diced
- 1/4 cup of granulated sugar
- 1/4 teaspoon of salt
- 6-8 tablespoons of cold water
- 3 cups of peeled and sliced apples (such as Granny Smith or Honeycrisp)
- 1 teaspoon of ground cinnamon
- 1/4 teaspoon of nutmeg
- 1/4 cup of brown sugar
- 1 tablespoon of lemon juice
- 1 teaspoon of vanilla extract
- 1 cup of heavy cream
- 2 tablespoons of powdered sugar
- Additional vanilla extract (to taste)
Instructions
- Make the Pie Crust: In a large bowl, combine the flour, sugar, and salt. Add the diced butter and mix until the mixture resembles coarse crumbs. Gradually add cold water, one tablespoon at a time, mixing just until the dough comes together. Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least an hour.
- Prepare the Filling: In another bowl, toss the sliced apples with lemon juice, cinnamon, nutmeg, brown sugar, and vanilla extract. Set aside to allow the apples to marinate in the spices.
- Assemble the Mini Pies: Preheat your oven to 425°F (220°C). Roll out one dough disk on a lightly floured surface and cut out circles using a cookie cutter or the rim of a glass. Press the circles into your mini pie dishes. Fill each crust with the spiced apple mixture.
- Top with Dough: Roll out the second dough disk and cut out more circles or strips to create a lattice top for your mini pies. Place the topping over the filled pies and seal the edges by crimping with a fork.
- Bake: Bake in the preheated oven for 20-25 minutes or until the crust is golden brown and the filling is bubbling. Remove from the oven and let cool slightly.
- Make the Vanilla Cream: In a mixing bowl, combine heavy cream, powdered sugar, and a splash of vanilla extract. Whip until soft peaks form.
- Serve: Top each mini apple pie with a generous dollop of vanilla cream and serve warm.
Notes
Choose a mix of tart and sweet apples for the best flavor. Chill the dough for a flaky texture.
