Description

Delightful oatmeal cookie cream pies featuring a chewy cookie base paired with creamy filling, perfect for gatherings or indulgent treats.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3 cups old-fashioned oats
  • 1 cup creamy filling (such as vanilla or cream cheese frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together softened butter, granulated sugar, and brown sugar until light and fluffy (3-5 minutes).
  3. Beat in the eggs one at a time, then stir in vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, cinnamon, and salt.
  5. Gradually add dry ingredients to the butter mixture, mixing until just combined.
  6. Fold in old-fashioned oats until evenly distributed.
  7. Drop tablespoons of dough onto parchment-lined baking sheets, leaving space between cookies.
  8. Bake for 10-12 minutes or until edges are golden brown.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
  10. Once cooled, spread creamy filling on one cookie and sandwich with another.

Notes

For the best results, use room temperature butter and old-fashioned oats. Store cookies and filling separately until ready to serve.
