Ingredients
- 1 cup of rice
- 2 cups of water
- 1 tablespoon of olive oil
- 1 teaspoon of salt
- 1 cup of your favorite vegetables (like carrots, peas, or bell peppers)
- 1 cup of cooked chicken or tofu (optional)
- Soy sauce to taste
- Green onions for garnish
Instructions
- Rinse the rice under cold water until the water runs clear.
- Combine the rinsed rice, water, olive oil, and salt in a pot and bring to a boil.
- Once boiling, reduce heat to low, cover, and let simmer for 15-20 minutes until the water is absorbed.
- While the rice cooks, heat a pan over medium heat, add a little olive oil, and sauté your choice of vegetables for about 5 minutes or until tender.
- If using, add chicken or tofu to the pan and cook until heated through.
- Fluff the cooked rice with a fork and mix it with the sautéed vegetables and chicken or tofu.
- Drizzle soy sauce over the mixture and stir well to combine.
- Serve hot, garnished with chopped green onions.
Notes
Best served warm. Pairs well with salad or crispy spring rolls. Can be stored in an airtight container for 3-4 days in the fridge.
