Description

A delightful and simple dish that combines fresh ingredients, perfect for any occasion.


Ingredients

  • 1 cup of rice
  • 2 cups of water
  • 1 tablespoon of olive oil
  • 1 teaspoon of salt
  • 1 cup of your favorite vegetables (like carrots, peas, or bell peppers)
  • 1 cup of cooked chicken or tofu (optional)
  • Soy sauce to taste
  • Green onions for garnish


Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Combine the rinsed rice, water, olive oil, and salt in a pot and bring to a boil.
  3. Once boiling, reduce heat to low, cover, and let simmer for 15-20 minutes until the water is absorbed.
  4. While the rice cooks, heat a pan over medium heat, add a little olive oil, and sauté your choice of vegetables for about 5 minutes or until tender.
  5. If using, add chicken or tofu to the pan and cook until heated through.
  6. Fluff the cooked rice with a fork and mix it with the sautéed vegetables and chicken or tofu.
  7. Drizzle soy sauce over the mixture and stir well to combine.
  8. Serve hot, garnished with chopped green onions.

Notes

Best served warm. Pairs well with salad or crispy spring rolls. Can be stored in an airtight container for 3-4 days in the fridge.
