Deliciously moist pumpkin bars topped with tangy cream cheese frosting, perfect for autumn gatherings.
Ingredients
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup vegetable oil
- 1 cup pumpkin puree
- 2 large eggs
- 1 teaspoon vanilla extract
- 8 oz cream cheese, softened
- 1/4 cup butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, combine the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg. Mix thoroughly.
- In another bowl, whisk together the vegetable oil, pumpkin puree, eggs, and vanilla extract until smooth.
- Gradually incorporate the wet ingredients into the dry ingredients until well combined.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely on a wire rack.
- Meanwhile, prepare the cream cheese frosting by beating together the softened cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract until fluffy.
- Once cooled, spread the frosting over the pumpkin bars, cut into squares, and serve.

For the best flavor, use fresh pumpkin puree and avoid overmixing the batter.
