Description

Delightful Pumpkin Cake Pops that capture the essence of fall with rich pumpkin flavor, spices, and a sweet chocolate coating.


Ingredients

  • 1 cup pumpkin puree
  • 1 box yellow cake mix
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon clove
  • 1/2 cup cheesecake frosting
  • Chocolate melts or candy coating for dipping
  • Sprinkles (optional) for decoration


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a bowl, mix together the pumpkin puree, cake mix, eggs, vegetable oil, cinnamon, nutmeg, and clove until well combined.
  3. Bake according to the cake mix instructions until a toothpick comes out clean. Allow to cool completely.
  4. Once cool, crumble the cake into a bowl and add the cheesecake frosting, mixing until well combined.
  5. Form the mixture into small balls and place them on a baking sheet.
  6. Freeze the cake pops for about 30 minutes to firm them up.
  7. Melt the chocolate or candy coating in a microwave-safe bowl.
  8. Dip the end of a lollipop stick into the melted chocolate and then insert it into the center of each cake pop.
  9. Dip each cake pop into the melted chocolate, covering completely, and then sprinkle with sprinkles if desired.
  10. Place them back on the parchment paper to set.
