Ingredients
- 1 cup pumpkin puree
- 1 box yellow cake mix
- 3 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon clove
- 1/2 cup cheesecake frosting
- Chocolate melts or candy coating for dipping
- Sprinkles (optional) for decoration
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
- In a bowl, mix together the pumpkin puree, cake mix, eggs, vegetable oil, cinnamon, nutmeg, and clove until well combined.
- Bake according to the cake mix instructions until a toothpick comes out clean. Allow to cool completely.
- Once cool, crumble the cake into a bowl and add the cheesecake frosting, mixing until well combined.
- Form the mixture into small balls and place them on a baking sheet.
- Freeze the cake pops for about 30 minutes to firm them up.
- Melt the chocolate or candy coating in a microwave-safe bowl.
- Dip the end of a lollipop stick into the melted chocolate and then insert it into the center of each cake pop.
- Dip each cake pop into the melted chocolate, covering completely, and then sprinkle with sprinkles if desired.
- Place them back on the parchment paper to set.
