Ingredients
- 2 cups all-purpose flour
- 1 cup pumpkin puree
- 1/2 cup sugar
- 1/4 cup brown sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 1/2 cup buttermilk
- 2 large eggs
- 1/4 cup melted butter
- 1 cup cream cheese
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup pumpkin spice sugar (for coating)
Instructions
- Preheat your oven to 350°F (175°C) and grease a doughnut pan.
- In a large bowl, whisk together the flour, sugar, brown sugar, baking powder, baking soda, pumpkin pie spice, and salt until combined.
- In another bowl, mix the pumpkin puree, buttermilk, eggs, and melted butter until smooth.
- Slowly add the dry mixture to the wet ingredients, stirring gently until just combined.
- Spoon the batter into the prepared doughnut pan, filling each cavity about two-thirds full.
- Bake for 12-15 minutes or until set and a toothpick inserted comes out clean.
- While cooling, prepare the cheesecake filling by mixing cream cheese, powdered sugar, and vanilla until smooth.
- Once cooled, fill each doughnut with the cream cheese mixture using a piping bag.
- Roll each filled doughnut in pumpkin spice sugar to coat.
