Description

Delightful doughnuts capturing the cozy essence of pumpkin spice and cheesecake, perfect for fall festivities.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1 cup cream cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup pumpkin spice sugar (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a doughnut pan.
  2. In a large bowl, whisk together the flour, sugar, brown sugar, baking powder, baking soda, pumpkin pie spice, and salt until combined.
  3. In another bowl, mix the pumpkin puree, buttermilk, eggs, and melted butter until smooth.
  4. Slowly add the dry mixture to the wet ingredients, stirring gently until just combined.
  5. Spoon the batter into the prepared doughnut pan, filling each cavity about two-thirds full.
  6. Bake for 12-15 minutes or until set and a toothpick inserted comes out clean.
  7. While cooling, prepare the cheesecake filling by mixing cream cheese, powdered sugar, and vanilla until smooth.
  8. Once cooled, fill each doughnut with the cream cheese mixture using a piping bag.
  9. Roll each filled doughnut in pumpkin spice sugar to coat.
  10. Serve and enjoy!

Notes

Measure flour correctly to avoid dense doughnuts. Allow melted butter to cool before mixing with eggs.
