Description

Delicious Pumpkin White Chocolate Chip Cookies with the warm flavors of pumpkin and a hint of spice, perfect for any occasion.

Ingredients

  • ½ cup unsalted butter, softened
  • ½ cup packed light brown sugar
  • ½ cup granulated sugar
  • 6 tablespoons pumpkin puree
  • 1 egg yolk
  • 1.5 cups all-purpose flour
  • ½ teaspoon cinnamon (or pumpkin pie spice)
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt (use ¼ teaspoon if using salted butter)
  • 1 cup white chocolate chips

Instructions

  1. Wrap the pumpkin puree in paper towels and squeeze out excess liquid.
  2. Cream the butter, granulated sugar, and brown sugar together for 2-3 minutes.
  3. Add vanilla, pumpkin puree, and egg yolk; mix until combined.
  4. Gradually mix in flour, baking soda, baking powder, salt, and cinnamon until just combined.
  5. Fold in white chocolate chips evenly.
  6. Chill the dough for 30 minutes.
  7. Preheat oven to 350°F (175°C).
  8. Place chilled dough balls on a baking sheet, 2-3 inches apart.
  9. Bake for 9-12 minutes until edges are slightly browned.
  10. Remove from oven and tap the pan to help cookies settle.
  11. Cool on the baking tray for 5-10 minutes before transferring to a cooling rack.

Notes

For best flavor, use fresh pumpkin puree. Chilling the dough is essential for achieving the perfect texture.
