Description

Delicious and simple chicken skewers marinated in ranch dressing, garlic, and parmesan. Perfect for gatherings or casual dinners.


Ingredients

  • ½ cup ranch dressing
  • ¼ cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried parsley
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1 teaspoon lemon juice (optional)
  • 1 ½ lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • Wooden or metal skewers


Instructions

  1. Mix together the marinade ingredients in a bowl until well combined.
  2. Place the cubed chicken in a resealable bag or shallow dish and pour the marinade over the chicken. Refrigerate for at least 30 minutes, or up to 2 hours.
  3. Thread the marinated chicken onto skewers, leaving space between pieces.
  4. If using wooden skewers, soak them in water for 15 minutes before threading.
  5. Preheat the grill to medium-high heat.
  6. Grill the skewers for 10-15 minutes, turning occasionally, until the chicken is cooked through (internal temperature of 165°F).
  7. Remove from the grill and let rest for a few minutes before serving.

Notes

For best flavor, marinate chicken for up to 2 hours. Wooden skewers should be soaked in water to prevent burning.
