Description

A beautifully baked shortbread pie filled with a luscious combination of mixed berries and apples, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 2/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup mixed berries (blueberries, raspberries, strawberries)
  • 2 medium apples, peeled and diced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 1 tablespoon cornstarch


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream the softened butter and powdered sugar together until light and fluffy (about 3-5 minutes).
  3. Add the vanilla extract and blend well.
  4. Gradually incorporate the flour and salt, mixing until a soft dough forms.
  5. Press two-thirds of the dough into a 9-inch pie pan evenly, creating a crust with a slight edge.
  6. In another bowl, combine the mixed berries, diced apples, granulated sugar, lemon juice, cinnamon, and cornstarch. Stir gently until the fruits are coated evenly.
  7. Pour the berry and apple mixture into the prepared crust and spread it evenly.
  8. Crumble the remaining one-third dough over the top of the filling.
  9. Bake the pie for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
  10. Allow the pie to cool for at least 20 minutes before slicing and serving.

Notes

Chill the dough if it’s too soft to work with for a flakier crust. Feel free to experiment with different fruits.
