Description
A beautifully baked shortbread pie filled with a luscious combination of mixed berries and apples, perfect for any occasion.
Ingredients
- 1 cup unsalted butter, softened
- 2/3 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 cup mixed berries (blueberries, raspberries, strawberries)
- 2 medium apples, peeled and diced
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon cinnamon
- 1 tablespoon cornstarch
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream the softened butter and powdered sugar together until light and fluffy (about 3-5 minutes).
- Add the vanilla extract and blend well.
- Gradually incorporate the flour and salt, mixing until a soft dough forms.
- Press two-thirds of the dough into a 9-inch pie pan evenly, creating a crust with a slight edge.
- In another bowl, combine the mixed berries, diced apples, granulated sugar, lemon juice, cinnamon, and cornstarch. Stir gently until the fruits are coated evenly.
- Pour the berry and apple mixture into the prepared crust and spread it evenly.
- Crumble the remaining one-third dough over the top of the filling.
- Bake the pie for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
- Allow the pie to cool for at least 20 minutes before slicing and serving.
Notes
Chill the dough if it’s too soft to work with for a flakier crust. Feel free to experiment with different fruits.
