Ingredients
- 4 medium starchy potatoes (e.g., Russets)
- 2 tablespoons butter
- 1/4 cup milk
- Salt, to taste
- Pepper, to taste
- Cheese, as desired
- Bacon bits
- Sour cream
- Chopped chives
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and scrub the potatoes to remove any dirt. Pat them dry.
- Prick each potato several times with a fork.
- Bake the potatoes in the oven for about 45-60 minutes, until soft.
- Remove the potatoes and let them cool slightly.
- Cut the potatoes in half lengthwise and scoop the insides out.
- Mix the scooped-out potato with butter, milk, salt, and pepper.
- Spoon the mixture back into the skins.
- Carve eyes and a mouth if desired.
- Top with cheese, bacon bits, sour cream, and chives.
- Place filled potatoes back in the oven for 10-15 minutes until heated through and cheese melts.
