Description
A flavorful and tender chicken dish made effortlessly in a slow cooker, served with fluffy rice soaking in delicious lemon herb sauce.
Ingredients
- 4 chicken breasts
- 2 lemons (juiced and zested)
- 2 tablespoons olive oil
- 4 cloves garlic (minced)
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups chicken broth
- 1 cup rice
- Fresh herbs for garnish (optional)
Instructions
- In a slow cooker, mix together lemon juice, lemon zest, olive oil, garlic, oregano, thyme, salt, and pepper.
- Add chicken breasts to the slow cooker and coat them in the sauce.
- Pour chicken broth over the chicken.
- Cover and cook on low for 6-7 hours or high for 3-4 hours, until chicken is cooked through and tender.
- About 30 minutes before serving, add rice to the slow cooker, ensuring it’s submerged in the cooking liquid.
- Once cooked, fluff the rice with a fork and serve the chicken on top of the rice.
- Garnish with fresh herbs if desired.
Notes
For extra flavor, marinate the chicken in the lemon and herb mixture for a few hours before cooking. If you prefer a thicker sauce, remove the chicken once it’s cooked, then thicken the sauce by simmering it on the stove for a few minutes. Feel free to add vegetables like carrots or peas when you add the rice for a complete one-pot meal.
