Description

A flavorful and tender chicken dish made effortlessly in a slow cooker, served with fluffy rice soaking in delicious lemon herb sauce.


Ingredients

  • 4 chicken breasts
  • 2 lemons (juiced and zested)
  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 1 cup rice
  • Fresh herbs for garnish (optional)


Instructions

  1. In a slow cooker, mix together lemon juice, lemon zest, olive oil, garlic, oregano, thyme, salt, and pepper.
  2. Add chicken breasts to the slow cooker and coat them in the sauce.
  3. Pour chicken broth over the chicken.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours, until chicken is cooked through and tender.
  5. About 30 minutes before serving, add rice to the slow cooker, ensuring it’s submerged in the cooking liquid.
  6. Once cooked, fluff the rice with a fork and serve the chicken on top of the rice.
  7. Garnish with fresh herbs if desired.

Notes

For extra flavor, marinate the chicken in the lemon and herb mixture for a few hours before cooking. If you prefer a thicker sauce, remove the chicken once it’s cooked, then thicken the sauce by simmering it on the stove for a few minutes. Feel free to add vegetables like carrots or peas when you add the rice for a complete one-pot meal.
