Ingredients
- 8 oz pasta (penne or your choice)
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and sauté for about 1 minute until fragrant.
- Add halved cherry tomatoes to the skillet and cook for 3-4 minutes until soft.
- Stir in the fresh spinach, cooking until wilted.
- Combine the cooked pasta with the sautéed vegetables.
- Season with salt and pepper to taste.
- Serve warm, topped with Parmesan cheese if desired.
Notes
