A delightful dessert that combines spiced apples, buttery crust, and rich toffee sauce, served with vanilla custard.
Ingredients
- 8 Granny Smith apples (about 9 cups sliced)
- 2 tbsp butter
- ½ cup sugar
- 1 tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp allspice
- ¼ tsp salt
- Juice of ½ lemon
- 2 ½ cups flour
- 1 tsp salt
- 1 cup cold butter (diced)
- ½ cup ice water
- ¼ cup butter
- ½ cup brown sugar
- ¼ cup heavy cream
- 4 tbsp cornstarch
- 1 egg
- 1 tbsp water
- 2 cups milk
- 3 egg yolks
- ⅓ cup sugar
- 1 tbsp cornstarch
- Pinch salt
- 2 tsp vanilla extract
- 1 tbsp butter
Instructions
- Prepare the Apple Filling: Peel, core, and slice the Granny Smith apples. Sauté with 2 tbsp butter, ½ cup sugar, cinnamon, nutmeg, allspice, salt, and lemon juice for 10 minutes.
- Make the Butter Pie Crust: Combine flour and 1 tsp salt, then cut in 1 cup cold butter and gradually mix with ½ cup ice water. Form into disks, wrap, and refrigerate for 30 minutes.
- Prepare the Toffee Sauce: Heat ¼ cup butter, ½ cup brown sugar, and ¼ cup heavy cream in a saucepan. Boil and simmer for 5 minutes, then cool.
- Assemble the Toffee Apple Pie: Preheat oven to 425°F (220°C). Roll out one dough disk, fill with sautéed apples, and drizzle with toffee sauce. Cover with second dough disk and seal edges.
- Bake the Pie: Brush with egg wash and bake for 45-50 minutes until golden brown.
- Prepare the Vanilla Custard Sauce: Heat milk, whisk egg yolks with sugar, cornstarch, and salt. Combine with heated milk, then thicken on low heat.
Notes
Use Granny Smith apples for tartness. Chill dough for flakier texture. Monitor for bubbling juices during baking.
