Ingredients

  • 8 Granny Smith apples (about 9 cups sliced)
  • 2 tbsp butter
  • ½ cup sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp allspice
  • ¼ tsp salt
  • Juice of ½ lemon
  • 2 ½ cups flour
  • 1 tsp salt
  • 1 cup cold butter (diced)
  • ½ cup ice water
  • ¼ cup butter
  • ½ cup brown sugar
  • ¼ cup heavy cream
  • 4 tbsp cornstarch
  • 1 egg
  • 1 tbsp water
  • 2 cups milk
  • 3 egg yolks
  • ⅓ cup sugar
  • 1 tbsp cornstarch
  • Pinch salt
  • 2 tsp vanilla extract
  • 1 tbsp butter


Instructions

  1. Prepare the Apple Filling: Peel, core, and slice the Granny Smith apples. Sauté with 2 tbsp butter, ½ cup sugar, cinnamon, nutmeg, allspice, salt, and lemon juice for 10 minutes.
  2. Make the Butter Pie Crust: Combine flour and 1 tsp salt, then cut in 1 cup cold butter and gradually mix with ½ cup ice water. Form into disks, wrap, and refrigerate for 30 minutes.
  3. Prepare the Toffee Sauce: Heat ¼ cup butter, ½ cup brown sugar, and ¼ cup heavy cream in a saucepan. Boil and simmer for 5 minutes, then cool.
  4. Assemble the Toffee Apple Pie: Preheat oven to 425°F (220°C). Roll out one dough disk, fill with sautéed apples, and drizzle with toffee sauce. Cover with second dough disk and seal edges.
  5. Bake the Pie: Brush with egg wash and bake for 45-50 minutes until golden brown.
  6. Prepare the Vanilla Custard Sauce: Heat milk, whisk egg yolks with sugar, cornstarch, and salt. Combine with heated milk, then thicken on low heat.

Notes
