Description

Indulge in these delicious Vegan Pecan Pie Cookies that capture the essence of traditional pecan pie while being entirely plant-based.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup pecans, chopped
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup vegan butter, melted
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the melted vegan butter, brown sugar, and granulated sugar. Mix well until smooth.
  3. Add the maple syrup and vanilla extract to the mixture, stirring until fully combined.
  4. In another bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Fold in the chopped pecans, ensuring they are evenly distributed throughout the dough.
  7. Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, spacing them about two inches apart.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  9. Remove from the oven and let cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For chewier cookies, slightly underbake them; for a crispier texture, bake them a minute or two longer. Chilling the dough for 30 minutes can enhance flavor and prevent spreading.
