Description
A rich and hearty beef stew perfect for chilly days, made with tender beef and fresh vegetables.
Ingredients
- 2 pounds beef stew meat
- 3 cups beef broth
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium-high heat. Brown the beef stew meat on all sides.
- Remove the meat and set aside. In the same pot, add onion and garlic; sauté until the onion is translucent.
- Add the tomato paste and cook for a minute.
- Return the beef to the pot and add the broth, carrots, potatoes, thyme, rosemary, salt, and pepper.
- Bring to a boil, then reduce heat to low. Cover and simmer for about 90 to 120 minutes, or until the beef is tender.
- Adjust seasoning and serve hot.
Notes
Serve with crusty bread, rice, or noodles. Add fresh herbs for garnish.
