Description

A rich and hearty beef stew perfect for chilly days, made with tender beef and fresh vegetables.


Ingredients

  • 2 pounds beef stew meat
  • 3 cups beef broth
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat olive oil over medium-high heat. Brown the beef stew meat on all sides.
  2. Remove the meat and set aside. In the same pot, add onion and garlic; sauté until the onion is translucent.
  3. Add the tomato paste and cook for a minute.
  4. Return the beef to the pot and add the broth, carrots, potatoes, thyme, rosemary, salt, and pepper.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for about 90 to 120 minutes, or until the beef is tender.
  6. Adjust seasoning and serve hot.

Notes

Serve with crusty bread, rice, or noodles. Add fresh herbs for garnish.
